Overview

Dr Erika Rosbotham graduated from Ulster University with a BSc (Hons) Human Nutrition with Diploma in Professional Practice International (DPPI), followed by a PhD in Human Nutrition (2024). She currently works as a Research Assistant within the Nutrition Innovation Centre for Food and Health (NICHE) on a range of funded projects, and is a Casual Lecturer within Food, Dietetics and Nutrition.

Erika’s research at the Nutrition Innovation Centre for Food and Health (NICHE) includes agri-food nutrition and consumer innovation, vitamin D biofortification of meat products, and phytochemicals in health and diseases. She has supervised several BSc and MSc student projects across these research areas.
